Mexican Pork Roast
Ingredients
- 1 Small pork roast
- 1 large jar of favorite salsa
- 1 beer; corona or something similar
- handful of Cumin
- 1/2 handful of smoked paprika
- handful of Ancho Chili powder
- Dash of Cayenne
- Salt as needed
- Mix spices together and rub on roast
- Add roast to Crockpot
- Dump out salsa on top of roast
- Pour beer on top of salsa and meat mixture (add some chicken stock if the mixture gets dry during the cooking process)
- Cook low and slow (6-8 hrs)
- Serve over minute rice with a dollop of sour cream or greek yogurt on top
Chickpea Chili
Ingredients
- 2 cans chickpeas, drained and rinsed
- 1 Onion, chopped
- 5 garlic cloves, minced
- 1 Tbl tomato paste
- handful of cumin
- pinch of salt
- dash of red pepper
- dash of cinnamon
- dash of turmeric
- 1 container Chicken stock (Kitchen Basics)
- 2/3 C green olives, sliced
- 1/2 C Golden raisins
- 1 28 oz can crushed tomatoes
- 4 C peeled and chopped butternut squash (or sweet potatoes)
- 1 C frozen green peas, thawed
- 1/4 head of fresh Cilantro, rough chopped
- Saute onion in oil
- Add tomato paste and spices, saute for 30 seconds
- Dump mixture in a crock pot
- Add chickpeas, stock, olives raisins, tomatoes and squash
- Cook low and slow (6-8 hours)
- Before serving, stir in peas and cilantro
- Serve over hot couscous
